Warm Cheesy Bean Dip

I love party food. A bunch of yummy dips and little appetizers. I wish we could eat this way more often instead of sitting down to a traditional meal.  For some occasions, that’s precisely what we do here. I make up a bunch of small bites and include some more substantial items and we make a meal out of it.  Grazing is fun. I’ve been making this recipe forever and it has slowly evolved over time because almost every time I make it, I try something a little different.  It’s all about your personal taste. You can customize it to your… [Read the full post]

Turkey Parmesan Meatballs in a Tomato Cream Sauce

I’ve had my eye on this recipe by Annie of Annie’s Eats for quite some time and this weekend I finally couldn’t take it anymore. Just as I was about to start baking ham and scalloped potatoes for our Easter meal I decided I had to stop everything and make these meatballs. Have you ever experienced a serious meatball emergency? No?   Just me? I ran off to the store for a few things I needed only to find that my local store doesn’t carry the main ingredient – ground chicken. I would not be deterred. I decided right there on… [Read the full post]

Overnight Cinnamon Rolls

Cinnamon rolls are an Easter tradition in this house and one that the boys would never let me forget. Especially Boy #2. I believe he might have given up half the goods in his Easter basket for a couple of these rolls warm from the oven. When they were very young and I was a seriously sleep-deprived young mother of four, I would happily reach for the refrigerated tube of ready made cinnamon rolls, crack it open, and call it breakfast. There was no way in this world I was going to set the alarm on a precious day off… [Read the full post]

Creamy Cauliflower Gratin

It’s my feeling that cauliflower is one of the most underrated vegetables around. It is, in fact, super versatile and really very tasty. Especially, when it’s smothered in a creamy, delicious, cheesy, sauce and topped with bread crumbs and Parmesan. I picked up some bagged cauliflower on my most recent trip to Costco and it was tough to decide which cauliflower recipe to share first. I have several that are pretty darn fabulous but with Easter right around the corner, this dish won out. It makes for a lovely addition to a holiday meal. Let’s get in close here and… [Read the full post]

Chicken Broccoli Alfredo (Lightened Up)

Truth be told, I haven’t allowed myself to eat pasta with alfredo or any other full on, cream based sauce, for most of my adult life. It was an easy sacrifice for me to make in my effort to stay in the same size jeans. As a result, if I even attempt it to eat it now, I can only manage a forkful or two. It’s just too rich for my taste buds. On the other hand, my boys have no problem demolishing a huge plateful. This lightened up version makes us all happy. It doesn’t qualify entirely as a… [Read the full post]

Chewy Peanut Butter Chocolate Chip Cookies

I love a good peanut butter cookie every now and then but when it’s cooking baking time in our house, the boys always ask for chocolate chip. Always. I’m pretty sure they think a cookie’s not a cookie unless it has chocolate chips. This cookie is my solution to our cookie conundrum. Instead of the crispy texture of a typical peanut butter cookie, they are soft and chewy and loaded with chocolate chips. They are truly the best of both worlds. I’m skipping the step-by-step and going straight to the dough. The recipe is so straight forward you don’t need to… [Read the full post]

Baked Spaghetti Casserole

I’m kickin’ it old school today. I’m talking classic, blast from the past, down-home, spaghetti casserole. There’s nothing fancy about this recipe but it is one of the most family-friendly, crowd pleasing dishes in existence. I think I was about 13 years old when I made my first attempt at spaghetti casserole and it was as delicious then as it is now. I’ve made some small, but important, changes to my recipe over the years that make it different than other popular versions I’ve seen. I think they also make it pretty darn amazing. It’s Spring Break time for us here which… [Read the full post]

Maple Honey Granola

My last post was for an uber fresh and healthy Mediterranean Chicken Chopped Salad and here I am, just days later, sharing this scrumptious and extremely wholesome granola. Although it’s my aim to fill the bellies of the folks in this house with lots of fresh, healthy cuisine, we will NOT be turning our backs on Mexican food, pasta, or good, old-fashioned casseroles. It’s all about balance my friends. Stay tuned for more comfort food coming very soon. My healthier food focus has been a real easy task when it comes to breakfast. I’m bonkers over my Tropical Green Smoothies… [Read the full post]

BBQ Chicken French Bread Pizza

Typically I have a pretty impressive amount of discipline and self control when it comes to food. When I’m cooking for a blog post, I normally decide before I even hit the kitchen whether or not I’ll eat after the last photo is taken. Most of the time, the answer is a big fat NO. It goes straight into the fridge to be consumed later for dinner or by the fist lucky guy to come across it. That was the plan for this pizza. The plan failed miserably. I swear, it was calling my name. And after all, a girl’s… [Read the full post]

Skillet Herbed Chicken and Tomatoes

We’ve finally had some rain here in California and I believe Ellen said it best during the Oscar ceremony last night. “We’re fine…thank you for your prayers”. No kidding, I nearly forgot what it felt like to have that wet stuff falling from the sky and to feel temperatures below 65.  We’re in dire need of rain, so even though the recent rainfall is a drop in the bucket, we’re happy to get it. Since my appetite seems to be totally connected to the weather, I’ve been really feeling comfort food for the past week. Soups, stews, chilis and this… [Read the full post]
