Crunchy Sweet Chicken Salad Sandwiches (and a Canon Powershot Giveaway!!!)

When I was contacted by Rudi’s Organic Bakery and asked to help them promote National Take Your Parent’s to Lunch Day and the Say Cheese Photo Contest I immediately knew that I was in. I am a long time lover of Rudi’s products and I’m thrilled to support their efforts to promote healthy school lunches for our kids. Their products are high in fiber, organic and don’t contain preservatives, GMO’s, or high fructose corn syrup.  On top of that this bread is incredibly tasty and substantial enough to hold up to your filling of choice. Nutella Stuffed French Toast Sticks

Very soon it will be time to think about what to feed the gremlins before they head off to school in the morning. I will be gremlin-less for the first time this year since Boy #4 will be waking up in his college dorm room and fending for himself in the mornings. But, he doesn’t leave until the end of September so I’ll ply him with Nutella Stuffed French Toast Sticks until then. They freeze very well so they can be made ahead. This makes them a great busy morning option for people of all ages, but especially the young ones…. [Read the full post]

Peach Raspberry Freezer Jam and a Ball Automatic Jam and Jelly Maker Giveaway!!!

As hard as this may be to believe, this jam was made in about 30 minutes, give or take. I love the method of making freezer jam so much more than traditional heat canning. It’s quick, easy, and you don’t need to be a scientist in order to ensure that you’ll end up with a safe and properly preserved jar of jam. When you pull some out of the freezer in December and taste the fruit of summer, you’ll be so happy you took a little time out of your day to preserve some of that summer freshness. So, go… [Read the full post]

Blueberry Crumb Cake

Today is the anniversary of the day I married my man. We are being completely spontaneous this year but it’s my hope that soon after this post is published we’ll be on the road to an undisclosed location. I’m not being private, we just really don’t know where we’re heading yet and to be honest, the location is unimportant. My only requirement is that we are together and away. Easy. Well, maybe not so easy. There’s always the planning, taking time off work, figuring out what the household will eat in our absence, etc. But it shall happen! I hope…. [Read the full post]

Today I’m sharing a recipe for classic homemade ice cream. It’s a no cook, no egg, easy peasy version that results in an old fashioned, soft serve style ice cream. If you aren’t feeling the summer vibe, this will help you get there. To improve that summer vibe even more I’m giving away a $100 Zappos gift card! Yippee!!! You might be surprised to find out that Zappos has more than just clothes and shoes (as if clothes and shoes are not enough!). Spectacular Blueberry Muffins

Spectacular Blueberry Muffins 2013-06-20 107-2

Spectacular is a big word and I’m not just throwing it around willy nilly. These muffins are big, beautiful, and spectacular. I shared a picture of a recent batch of them on my Facebook page and the response was pretty overwhelming. I got the message loud and clear. You want your blueberry muffins! I’m here to deliver. If you don’t want to dilly dally (I just managed to use willy nilly and dilly dally in one post), feel free to scroll down to the bottom of this post to go straight to the recipe. On the other hand, if you’d like to… [Read the full post]

Butter Brickle Frozen Dessert

Butter Brickle Frozen Dessert 2013-05-31 097-2

Food can evoke certain feelings in us and this lovely dessert does that for me in a big way. It’s a rush of memories from summers past. School is out, running through the sprinklers, BBQ’s, old fashioned 4th of July celebrations, summer vacations, and sleepovers in the tent my Dad set up in our front yard. It’s so pretty I wanted to include about 100 pictures of it from different angles but managed to pick out just a few. It was hard. It’s basically a very simple no-bake cheesecake or “freezer cheesecake”  that is layered with a toasted oat/pecan mixture and… [Read the full post]

Grilled Chicken Satay with Peanut Dipping Sauce

Grilled Chicken Satay with Peanut Dipping Sauce 2013-05-28 001-2

It’s been nothing short of crazy around here the past couple of weeks. We’ve had birthdays, finals week, Boy #4′s upcoming high school graduation, and of course – work. Who has time to do all of this gracefully? I’m doing it, but wouldn’t use the word graceful to describe myself right now. There are things forgotten, times we have to say no when we want to say yes, dirty floors and unmade beds, and never enough sleep. But after this week it will officially be summer for us here in this house and I cannot tell you how much I’m… [Read the full post]

Good Morning Sunshine Smoothie

Good Morning Sunshine Smoothie 2013-05-18 066-2

Over the years, I’ve gotten in the habit of greeting my grumpy, sleepy boys in the morning with “Good morning sunshine”. The name seemed perfectly suited for this bright, sunshiny morning beverage. They are super easy to whip up in the morning. So let’s get to it… A few ingredient notes. Using frozen fruit is the key to making a smoothie with good texture. Trader Joe’s has a great selection of bagged frozen fruit and their prices are very good. For this recipe you’ll need frozen mango and pineapple See that frozen banana up there? When I have some bananas… [Read the full post]

Pretty Chicken Marinade

Pretty Chicken Marinade 2013-05-13 067-2

I’ve been waiting for grilling season to share this recipe with you and I do believe it is time! My barbecue has been fired up several times over the past couple of weeks and there’s no stopping me now. This is hands down, no contest, my favorite grilled chicken marinade that I’ve used for years…and years…and, you get the point. In addition to the amazing flavor, it’s true to it’s name and imparts a beautiful, rich golden hue to the chicken as it grills. It works well with any type of chicken but I usually do a combination of boneless,… [Read the full post]

Skillet Lasagna

Skillet Lasaga (smaller)-057

With this post I promise many things. Speed of preparation. Simplicity in ingredients. Easy, breezy clean up. And possibly the most important thing of all, it goes exceptionally well with a nice glass of red wine. You’ll have a hearty, wholesome, delicious meal on the table in about 45 minutes. This is the recipe I turn to when the boys are craving lasagna but my work day doesn’t allow me to be in the kitchen long enough to put together the traditional type. Shall we get started? The grocery list – Shaved or grated Parmesan cheese, shredded mozzarella & provolone cheese (or… [Read the full post]

Chocolate Peanut Butter Banana Bread

Chocolate Peanut Butter Banana Bread (smaller)-029

Banana bread is a good thing. I can’t seem to leave a good thing alone. I came across a recipe for Chocolate Banana Bread ages ago and have made it countless times. It’s fabulous. Then one day my husband, who has apparently been influenced by my tweaked, food blogging mind, said “You know, this would be really good with peanut butter in it”. After I got over the shock of him making a suggestion for modifying a recipe, I tried it, and the rest is history. The grocery list – butter, all-purpose flour, sugar, creamy peanut butter, vanilla, baking soda,… [Read the full post]

Tangy Oven Barbecue Chicken

Oven Barbecue Chicken 2013-02-16 046-2

We’ve had a taste of summer around here for a few days but soon it will be back to the cold and rainy days of February. It’s not that I hate winter weather, really. Cozying up with a blanket in front of a fire is one of my favorite activities. But the grey days begin to wear on me after awhile and I find myself craving everything that goes along with the sun. I know I have nothing whatsoever to complain about since I live in California but to me it’s cold if it drops below 65 – burr! I… [Read the full post]

Easy Maple Pecan Monkey Bread

Easy Maple Pecan Monkey Bread (smaller)-139

I’ve always been attracted to recipes for monkey bread. Maybe it’s because my house is full of monkeys. At least that’s how it feels at times. Monkey bread consists of lots of little pieces of sugar coated bread that are layered and baked together with a sweet, gooey, buttery mixture. It’s heavenly served warm from the oven. I recently had the opportunity to work with Pillsbury Grands through the Allrecipes Brand Ambassador Program and came across this recipe. I made a few simple changes and all my monkeys and I were quite happy with the result. The grocery list – Granulated sugar, cinnamon,… [Read the full post]

Taco Pasta Bake

Taco Pasta Bake 2013-02-02 089-2

I got this recipe from my sis a long, long time ago. I guess I should clarify which sister, since I’ve got four. I’m talking about this one. I once nearly fought to death over the last Ho Ho with this girl. It was an intense battle but in the end, she won. She became a vegan a few years ago so I get all the Ho Ho’s now. She made her version of this Mexican inspired pasta dish for me eons ago; after the Ho Ho incident but long before she became a vegan. I liked it so much I… [Read the full post]
