I always keep my eye out for quick, simple meal shortcuts to help me pull together a balanced meal on crazy, busy, weeknights. You know…those nights. I have a feeling you can relate.
I’ve been a fan of Alexia Food’s frozen sides ever since they caught my eye at the grocery store quite some time ago. I swear the Sweet Potato Fries called out my name from the freezer case so I couldn’t resist picking up a bag to bring home with me. We gave them a try and were so pleased with them! They are lightly seasoned with sea salt and the texture is crispy and perfect. In addition to the Sweet Potato Fries, Alexia has lots of other fun, extremely family-friendly varieties that include all-natural, premium ingredients and are ready in under 30 minutes. This is precisely what is in order most of the time around here.
Experience has taught me that keeping a bag or two of the different Alexia varieties in my freezer is a real lifesaver when I need a quick side dish option. Here are two of my favorites squeezed in next to my strawberry freezer jam.
Let’s have some fun and take a look at five simple weeknight meal ideas incorporating some of the yummy choices available from Alexia. All of these meals can be prepared in 30 minutes or less. Ready? Go!
- Dinner #1 – Turkey burgers and Alexia Sweet Potato Fries with Sriracha dipping sauce. A simple salad on the side completes this meal.
Instead of great big burgers, I like to do sliders or pick up a package of smaller sized buns and make mini burgers, like in the photo above. This helps us keep proportions in order but I always make enough for my boys to grab seconds if the smaller size doesn’t do the trick. For my husband and I, one is plenty. These burgers are based on my Turkey Burger Sliders. A simple mixture of Sriracha and light mayonnaise does double duty as a spread for the turkey burgers and a dipping sauce for these crispy, delicious sweet potato fries.
- Dinner # 2 – Simply prepared steak with Alexia Roasted Straight Cut Fries with Sea Salt and a Creamy Horseradish Sauce. For the veggie side, I did my Sweet and Spicy Asian-Style Green Beans
The flavors of this meal all complement each other so well and this creamy, smoky dipping sauce is out of this world good. It’s perfect for both the steak and the fries. The recipe calls for mayonnaise but I used a combination of light sour cream and light mayonnaise and the result was fabulous. Try it! These fries are 98% fat free and 100 calories per serving and made with U.S. grown Yukon potatoes and all-natural sea salt.
- Dinner #3 – Build your own breakfast burrito bar.
Put out a variety of items and let everyone customize their burrito to their liking. You can keep it simple or get very creative with your choices of filling ingredients. I included scrambled eggs with fresh spinach, cooked and crumbled turkey breakfast sausage, Alexia Roasted Tri-Cut Potatoes with Sea Salt, shredded cheese, chopped green onion, and sour cream.We love breakfast for dinner!
- Dinner #4 – Teriyaki Glazed Chicken Bites over Rice Pilaf with Alexia Crispy Onion Rings and sauteed baby carrots.
Cube and saute boneless, skinless chicken breast in a little vegetable oil until cooked through and golden brown and then add your favorite bottled teriyaki sauce. Cook and stir till thickened, sprinkle with sesame seeds and chopped green onion, and serve over rice pilaf. This meal looks as if you’ve gone to a lot of trouble but it’s fast and easy to put together. The onion rings are coated in Japanese style Panko bread crumbs and cook up perfectly crisp.
- Dinner #5 – Waffle Fry Chili Nachos!
Yes, you heard me right. This is a great way to use way to use up leftover chili or just grab a can of your favorite canned chili, warm it slightly and spoon it over a pan of cooked Alexia Seasoned Waffle Cut Fries. Sprinkle on some grated cheese and pop it under the broiler until it’s warm and melted. You can top these with anything your little heart desires. I chose pickled jalapeno rings, chopped green onion, and a little sour cream. Let me tell you, if you place a pan of these nachos in front of football fans during the next game, their won’t be a crumb…or a waffle fry, left.
