I’m happy to be teaming with Ball® Canning again this year to review their newest appliance that will help you simplify the home canning process. They have generously provided one of these shiny new appliances, along with some more canning essentials, for me to give away to one lucky winner!
Let me introduce you to the newest in the growing line of canning appliances from the home canning experts at Ball. The Ball FreshTech Electric Water Bath Canner and Multi-Cooker is a countertop appliance that allows you to move the processing portion of your canning off your stovetop to anywhere else in your kitchen within reach of an electric outlet. This large capacity unit works perfectly for all high-acid canning recipes such as jams, jellies, pickles, salsas, tomatoes, and fruits.
A few highlights about the construction. When I say large capacity, I mean it. This 21-quart pot is large enough to process 7 quart jars, 8 pint jars, or 12 half-pint jars at once. Although large, the unit is surprisingly light weight. One of the best features, as far as I’m concerned, is the spigot that allows you to drain the water from the pot directly into your sink. If you have counter space next to your sink within reach of an electric outlet you are all set. No more lugging a heavy pot of water back and forth from sink to stove.
In addition to its canning capabilities, the unit comes with a steaming rack for veggies, chicken, or seafood. The portable appliance can also be used to cook a variety of foods like soups, stews, chili, and pasta and to hold and dispense hot beverages right through the built-in drain spout. This is a great feature for large potlucks, school functions, or neighborhood parties. Also included is a small recipe guide but for more inspiration, I recommend checking the large list of water bath canning recipes on the Ball website.
To take my new canner on a test run, I did some jam making this weekend. While the jam cooked, I used the unit to preheat my jars, the first step in the water bath canning process. I love the convenience of having this big pot sitting right next to my sink within reach of my pull-out faucet for easy filling.
In the meantime, my first batch of Apricot Mango Jam was cooking away in my Ball Jam and Jelly Maker. I’m crazy about this appliance and have used it every time I’ve made jams and jellies since I got it a couple of years ago, but you can also prepare your recipe on the stove.
After filling the preheated jars with jam, they are placed back in the unit for the processing time. When the unit is switched to the CANNING setting, the water will come to a boil and then you set your timer for the time indicated in the recipe you’re using. For most jams and jellies, the processing time is 10 minutes.
When the processing is over, the water drains right from the unit into your sink. I found this to be fabulously convenient.
I would definitely recommend this appliance for the serious canning enthusiast. The only drawback I would note is the size. It is a bulky machine and you’ll need a spot for storage but the convenience factor is well worth it. It retails for $149.99 and is available online at Ball’s Fresh Preserving Store and Amazon.
The fruits of my labor – 8 jars of Mixed Berry Jam and 4 jars of Apricot Mango Jam. The Apricot Mango was a test recipe and it is stellar! I’ll share the recipe with you soon.
