I’m here today to share this beautifully simple but incredibly delicious recipe that I think will completely change your feeling about summer entertaining.
I was honestly stunned by this dish for several reasons. First, it’s just so pretty and really creates a fresh, summery vibe on the table, especially if you’re serving outdoors which is pretty much the only way I want to go in the summer.
Second, as it was cooking it made my house smell exactly like an Italian restaurant. I kid you not! Your guests will know something good is coming their way as soon as they walk in the door.
And, finally, it was so fast and easy and my family was crazy for it.
It starts with frozen SeaPak Shrimp Scampi that I dressed up with a few fresh, summery ingredients and served over penne pasta. You really could serve this over any type of cooked pasta but since I’ve got some penne fans in this house, that is the direction I went.

The SeaPak Shrimp Scampi comes to you ready to go. It’s literally just a matter of placing it right from the freezer into a skillet and sautéing it until the shrimp is cooked through. The luscious sauce is created as the Scampi warms.
About half way through the cooking time I added halved grape tomatoes, corn, and just a touch of crushed red pepper flakes. You can use fresh corn cut from the cob or opt for frozen. Either works beautifully.
At the end of the cooking time I sprinkled in lots of fresh basil and a little Parmesan.
I stirred the cooked penne right into the skillet with the cooked scampi to make sure it would all be coated with that wonderful sauce.
Add a simple tossed green salad, a loaf of French bread and a glass of rosé and you have yourself a completely stress-free summer meal to enjoy outside.
Even on a busy weekday, you could walk in the door and have this meal ready to serve to guests in under 30 minutes.
Summer Shrimp Scampi
Ingredients
- 12 ounces dry penne
- 24 ounces SeaPak Shrimp Scampi, (2 12-ounce packages)
- 1 cup halved grape or cherry tomatoes
- 1 cup corn, fresh or frozen
- ¼ teaspoon crushed red pepper flakes, or to taste
- ¼ cup thinly sliced fresh basil
- ¼ shaved or grated Parmesan cheese, plus additional for garnish, if desired
Instructions
- Cook penne about 1 minute shy of the package directions.
- Meanwhile, place a 12- to 14-inch skillet over MEDIUM-HIGH heat. Add frozen SeaPak Shrimp Scampi in an even layer. Cook, stirring, for about 4 minutes. Add tomatoes, corn, and crushed red pepper flakes. Cook and stir for an additional 3 or 4 minutes, or until tomatoes have softened and shrimp is fully cooked through.
- Remove from heat and stir in basil and sprinkle with Parmesan. Stir in cooked penne.
- Serve with additional Parmesan for garnish, if desired.
