With a few tips and tricks, it’s incredibly easy to put together a beautiful veggie party tray that will make an eye-catching appetizer at your next holiday gathering.

It’s officially the holiday season. The time of year when we are either hosting or attending all those fun, festive gatherings full of indulgent food and drink. Why is it that our normal food intake guidelines and self-control seem to take a vacation from November until January? An easy way to add a little balance to those holiday gatherings is to offer up some fresh, healthy options like this pretty vegetable tray. With a little thought and effort, and a couple of Crisp Cooking tools, you can make a stunning platter that will be a beautiful centerpiece to your holiday buffet.
Pick what looks best at the grocery store or farmers’ market, choosing the most vibrant, in-season veggies available to you. Be sure to select a nice variety of colors. I used the Straight Peeler to quickly and very cleanly, peel the carrots and peel strips off the cucumber, leaving some of the peel intact for a nice effect when sliced.
I used the Wavy Knife (so cool) to slice my veggies. There is no science to this – just slice away and you end up with pretty, serrated, cut edges. It’s very easy and so much more eye-catching than plainly sliced veggies. Don’t let the fresh, pretty look of these tools fool you – the stainless steel edge on that knife is sharp! All the knives come with blade covers for storage so you can slip them into your drawers without a worry. This is an especially good feature for me. A bit clumsy? Maybe. Let’s move on.
To add even more vibrancy and interest, I sliced off the end of a small head of purple cabbage and then carefully (please be careful!) cut out what I could from the center with a sharp knife. Crisp has a Paring Knife that works great for this purpose. Then, I went in with a spoon and scraped out a little more to create a cabbage bowl for my dip. You might need to slice off some from the bottom of the bowl to make it sit level. Another pretty choice – slice the tops of brightly colored bell peppers and fill them with dip.
I tucked leaves of flowering kale under some of the veggies but you could use any type of greens or fresh herbs to spruce up the edges of your plate. And, that’s it! To make it even easier, prepare the vegetables the day before and store them in plastic storage bags until you’re ready to assemble your platter.
