Guinness Beer Chili

Ingredients
  • 2 tablespoons olive oil
  • 1 cup chopped yellow onion
  • 1 cup chopped green bell pepper
  • 1 8 ounce package fresh sliced mushrooms
  • 1 heaping teaspoon fresh minced garlic
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon crushed red pepper
  • 2 teaspoons oregano
  • 1 tablespoon chili powder
  • Salt to taste
  • Pepper to taste
  • 2 pounds lean ground beef
  • 1 28 ounce can diced tomatoes
  • 1 15.5 ounce can dark red kidney beans, drained
  • 1 15.25 ounce can black beans, drained
  • 1 14.5 ounce can tomato sauce
  • 1 11.2 ounce bottle Guinness beer
  • 2 teaspoons dark brown sugar
  • Optional toppings: avocado chunks sour cream, chopped fresh cilantro and/or shredded cheese
Instructions
  1. Heat olive oil in a large pot over medium high heat. Add onions, green peppers, mushrooms and minced garlic. Sautee about 5 minutes, or until vegetables are tender.
  2. Add ground beef and cook until browned, crumbling with your spoon or spatula as it cooks. Drain beef mixture in a colander and return to pot.
  3. Add cayenne pepper, crushed red pepper, oregano and chili powder, salt and pepper. Stir well to combine.
  4. Add diced tomatoes, kidney beans, tomato sauce, beer and brown sugar. Bring just to boiling, reduce heat and simmer (covered) for 1 hour.
