  • 5 medium Yukon gold potatoes (about 2 to 2 1/4 pounds)
  • 3 tablespoons olive oil
  • fine ground sea salt, to taste
  1. Preheat oven to 400 degrees F.
  2. Generously coat a well-seasoned large rimmed baking sheet with non-stick cooking spray. Wash and scrub the potatoes and dry with paper towels.
  3. Slice the potatoes in 1/2-inch slices and then cut them into matchsticks. Place the sliced potatoes in a large mixing bowl. Add olive oil and toss to coat the potatoes.
  4. Pour the oil-coated potatoes out onto the prepared baking sheet, spreading out into an even layer. Bake for about 20 minutes, then using a spatula, carefully toss the potatoes, spreading back into a single layer when done. Bake for an additional 20 to 25 minutes, mixing once or twice more to ensure even browning. Remove from oven when crisped to your liking.
  5. Sprinkle with salt to taste and serve.
