Summer Shrimp Scampi

Ingredients

  • 12 ounces dry penne
  • 24 ounces SeaPak Shrimp Scampi (2 12-ounce packages)
  • 1 cup halved grape or cherry tomatoes
  • 1 cup corn fresh or frozen
  • ¼ teaspoon crushed red pepper flakes or to taste
  • ¼ cup thinly sliced fresh basil
  • ¼ shaved or grated Parmesan cheese plus additional for garnish, if desired

Instructions

  • Cook penne about 1 minute shy of the package directions.
  • Meanwhile, place a 12- to 14-inch skillet over MEDIUM-HIGH heat. Add frozen SeaPak Shrimp Scampi in an even layer. Cook, stirring, for about 4 minutes. Add tomatoes, corn, and crushed red pepper flakes. Cook and stir for an additional 3 or 4 minutes, or until tomatoes have softened and shrimp is fully cooked through.
  • Remove from heat and stir in basil and sprinkle with Parmesan. Stir in cooked penne.
  • Serve with additional Parmesan for garnish, if desired.

Notes

If using frozen corn, there is no need to defrost it.
