- 1 ½ pounds baby red potatoes halved
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 2 teaspoons brown sugar
- 1 teaspoon granulated garlic or garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt plus additional if desired
- ¼ teaspoon black pepper
- ⅛ teaspoon cayenne pepper or to taste
Set oven to 400 degrees F. Spray a large rimmed baking sheet with non-stick cooking spray.
Add the potatoes and olive oil to a large mixing bowl and toss to coat.
Combine all the spices in a separate small bowl and pour over the potatoes. Stir until potatoes are evenly coated with the spice mixture and transfer them to the prepared baking sheet.
Bake for about 30 to 40 minutes, stirring about every 15 minutes, until potatoes are fork-tender and golden brown.
Taste and season with additional salt, only if needed.
