Ingredients

  • ¼ cup olive oil
  • 1 cup diced white or yellow onion
  • 1 small green bell pepper seeded and diced
  • 1 jalapeno seeded and diced
  • 1 teaspoon minced garlic
  • 45 ounces black beans, drained (3 15-ounce cans)
  • ¾ cup low-sodium chicken or vegetable broth
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • freshly ground black pepper , to taste
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sugar

Instructions

  • Heat oil in heavy 12-inch skillet over MEDIUM heat. Add onion, bell pepper, jalapeno, and garlic and cook, stirring, until vegetables begin to soften, approximately 5 to 6 minutes. Add the beans, broth, oregano, cumin, salt, pepper, vinegar, and sugar and simmer until mixture thickens and flavors blend, stirring occasionally, about 15 minutes.
