Coconut Rice with Cilantro and Lime

  • 1 tablespoon vegetable oil
  • 1 tablespoon sugar
  • 2 cups Jasmine rice
  • 1 (14 ounce) can unsweetened coconut milk
  • 2 cups water
  • dash of salt, or to taste
  • 1/3 cup chopped fresh cilantro
  • 1 lime juiced


  • Heat oil in a 12" skillet over medium heat. Add sugar and stir for a minute or until dissolved. Add rice and cook, stirring, until lightly toasted. Add coconut milk, water, and a dash of salt. Increase heat to high and bring mixture to a boil. Reduce heat to low, cover, and simmer for 20 minutes or until liquid is absorbed.
  • Remove rice from heat and stir and fluff the rice. Stir in the lime juice and cilantro and serve.
