Coconut Rice with Cilantro and Lime
Jasmine rice with a fragrant, mild coconut flavor. Coconut Rice with Cilantro and Lime is delicious with a variety of Asian and Indian entrees.
- 1 tablespoon vegetable oil
- 1 tablespoon sugar
- 2 cups Jasmine rice
- 1 (14 ounce) can unsweetened coconut milk
- 2 cups water
- dash of salt, or to taste
- 1/3 cup chopped fresh cilantro
- 1 lime juiced
Heat oil in a 12" skillet over medium heat. Add sugar and stir for a minute or until dissolved. Add rice and cook, stirring, until lightly toasted. Add coconut milk, water, and a dash of salt. Increase heat to high and bring mixture to a boil. Reduce heat to low, cover, and simmer for 20 minutes or until liquid is absorbed.
Remove rice from heat and stir and fluff the rice. Stir in the lime juice and cilantro and serve.
