Spinach Feta Orzo

Ingredients

  • 1 cup uncooked whole wheat orzo
  • 1 tablespoon extra virgin olive oil
  • 2 large handfuls fresh spinach leaves sliced into thin pieces
  • ½ cup crumbled feta
  • coarse salt and pepper to taste

Instructions

  • Cook orzo according to directions on package, about 9 minutes.
  • When orzo is done cooking, drain well then place back into the pot (with burner turned off). Add oil to orzo and stir. Add sliced fresh spinach and stir well until spinach is wilted into the orzo. Add crumbled feta and season to taste with salt and pepper.
