Guinness Beer Chili

Hearty and chunky, this Guinness Beer Chili is loaded with mushrooms and green peppers.

Ingredients

  • 2 tablespoons olive oil
  • 1 cup chopped yellow onion
  • 1 cup chopped green bell pepper
  • 8 ounces mushrooms sliced
  • 1 teaspoon (heaping) fresh minced garlic
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon crushed red pepper
  • 2 teaspoons oregano
  • 1 tablespoon chili powder
  • Salt and pepper to taste
  • 2 pounds lean ground beef
  • 28 ounce can diced tomatoes
  • 15.5 ounce can dark red kidney beans drained
  • 15.25 ounce can black beans drained
  • 14.5 ounce can tomato sauce
  • 11.2 ounce bottle Guinness beer
  • 2 teaspoons dark brown sugar

Optional Toppings

  • Avocado chunks, sour cream, chopped fresh cilantro and/or shredded cheese

Instructions

  • Heat the olive oil in a large pot over MEDIUM-HIGH heat. Add the onions, green peppers, mushrooms and minced garlic. Sauté about 5 minutes, or until the vegetables are tender.
  • Add the ground beef and cook until browned, crumbling with your spoon or spatula as it cooks. Drain the beef mixture in a colander and return it to the pot.
  • Add the cayenne pepper, crushed red pepper, oregano and chili powder, salt and pepper. Stir well to combine.
  • Add the diced tomatoes, kidney beans, tomato sauce, beer and brown sugar. Bring the mixture just to boiling, reduce heat and simmer, covered, for 1 hour.
