Guinness Beer Chili
Hearty and chunky, this Guinness Beer Chili is loaded with mushrooms and green peppers.

- 2 tablespoons olive oil
- 1 cup chopped yellow onion
- 1 cup chopped green bell pepper
- 8 ounces mushrooms sliced
- 1 teaspoon (heaping) fresh minced garlic
- ¼ teaspoon cayenne pepper
- 1 teaspoon crushed red pepper
- 2 teaspoons oregano
- 1 tablespoon chili powder
- Salt and pepper to taste
- 2 pounds lean ground beef
- 28 ounce can diced tomatoes
- 15.5 ounce can dark red kidney beans drained
- 15.25 ounce can black beans drained
- 14.5 ounce can tomato sauce
- 11.2 ounce bottle Guinness beer
- 2 teaspoons dark brown sugar

- Avocado chunks, sour cream, chopped fresh cilantro and/or shredded cheese
Heat the olive oil in a large pot over MEDIUM-HIGH heat. Add the onions, green peppers, mushrooms and minced garlic. Sauté about 5 minutes, or until the vegetables are tender.
Add the ground beef and cook until browned, crumbling with your spoon or spatula as it cooks. Drain the beef mixture in a colander and return it to the pot.
Add the cayenne pepper, crushed red pepper, oregano and chili powder, salt and pepper. Stir well to combine.
Add the diced tomatoes, kidney beans, tomato sauce, beer and brown sugar. Bring the mixture just to boiling, reduce heat and simmer, covered, for 1 hour.
