Slow Cooker Chicken Caesar Sandwiches

- 2 pounds boneless skinless chicken breasts trimmed of fat
- 2 cups low-sodium chicken broth
- 1 cup Homemade Caesar Salad Dressing or your favorite store-bought creamy Caesar Dressing (like Cardini's), or more as needed
- ½ cup shredded Parmesan cheese
- ¼ cup fresh chopped parsley
- ½ teaspoon freshly ground black pepper
- 6 hamburger buns we love brioche buns
- Romaine lettuce leaves as needed
Place the chicken and chicken broth in a 4- to 6-quart slow cooker, cover and cook on LOW for 6 to 7 hours.
Transfer the cooked chicken to a bowl or cutting board and shred with two forks. Discard the cooking liquid and return the shredded chicken to the slow cooker. Add the Caesar dressing, Parmesan cheese, parsley, and pepper and stir until well combined. If you'd like a creamier chicken, add additional dressing as needed. Cover and cook on HIGH for 20 to 30 minutes or until warmed through.
Serve on hamburger buns or wraps with romaine lettuce.
Storage
Transfer the cooled leftover chicken to an airtight container and refrigerate for up to 4 days.
Leftovers can be reheated the following day or they are delicious cold from the fridge.
