This Champagne Vinaigrette is light, bright, and just a little bit sweet, thanks to a touch of honey and a hint of fresh orange juice. Itβs a simple way to elevate any salad!

cup extra virgin olive oil
- 3 tablespoons champagne vinegar
- 1 tablespoon freshly squeezed orange juice
- 1 tablespoon honey or more for a sweeter dressing
- 1 teaspoon Dijon mustard
- 1 clove garlic minced
- salt and freshly ground black pepper to taste
Place all of the ingredients in a mason jar or other airtight container and shake well. As you shake, the mixture will combine and slightly emulsify (thicken just slightly).
Taste and season with additional salt and pepper, if needed.

Storage: Store your Champagne Vinaigrette in an airtight container in the fridge, and it will stay good for up to a week. Just keep in mind that it may thicken a bit when chilled. If that happens, let it sit at room temperature for about 10 to 15 minutes before using. Give it a good shake to re-emulsify.
