Champagne Vinaigrette

This Champagne Vinaigrette is light, bright, and just a little bit sweet, thanks to a touch of honey and a hint of fresh orange juice. It’s a simple way to elevate any salad!

Ingredients

  • β…“ cup extra virgin olive oil
  • 3 tablespoons champagne vinegar
  • 1 tablespoon freshly squeezed orange juice
  • 1 tablespoon honey or more for a sweeter dressing
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • salt and freshly ground black pepper to taste

Instructions

  • Place all of the ingredients in a mason jar or other airtight container and shake well. As you shake, the mixture will combine and slightly emulsify (thicken just slightly).
  • Taste and season with additional salt and pepper, if needed.

Notes

This recipe yields approximately β…” cup.
Storage: Store your Champagne Vinaigrette in an airtight container in the fridge, and it will stay good for up to a week. Just keep in mind that it may thicken a bit when chilled. If that happens, let it sit at room temperature for about 10 to 15 minutes before using. Give it a good shake to re-emulsify.
