These sweet and chewy Oatmeal Coconut Date Cookies have great texture and incredible flavor.

Ingredients
  • 1 1/4 cups butter (2 1/2 sticks)
  • 3/4 cup brown sugar , firmly packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups oatmeal quick cooking or old fashioned
  • 1 cup dates chopped into small pieces
  • 1 cup walnuts chopped
  • 1 cup sweetened flaked coconut
Instructions
  1. Preheat oven to 375 degrees F.

  2. Cream butter and sugars with a hand mixer or in the bowl of your stand mixer. Add egg and vanilla and mix until well combined.
  3. Add flour, baking soda, and salt and mix just until combined.
  4. In a separate large bowl, combine oatmeal, dates, walnuts, and coconut. Add to dough butter/sugar mixture. Mix until well combined.
  5. Using your hands, roll a heaping tablespoon of dough into a ball and place it on a parchment paper lined or ungreased baking sheet. Repeat with remaining dough to fill sheet, leaving a couple of inches between each ball of dough. Bake for 8-9 minutes. Allow to cool on baking sheets for a few minutes after removing from oven and then move to wire racks to cool completely. Repeat with remaining dough.
  6. Store cookies in an airtight container.
