Homemade Caesar Salad Dressing

  • 1 clove garlic
  • 1-1/2 teaspoons anchovy paste or 3 anchovy fillets
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons red wine vinegar
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon fresh ground black pepper
  • 1/3 cup good quality extra virgin olive oil
  1. Place garlic in a food processor and pulse until finely chopped. Add remaining ingredients, except olive oil, and pulse until well combined. With unit running, add olive oil through the feed tube of the food processor. Process for a minute or two until creamy and emulsified.
  2. Transfer to a mason jar or other airtight container and refrigerate immediately. Best if made a couple of hours in advance. Keeps well in the refrigerator for several days.
