Ingredients

  • ¾ cup mayonnaise
  • 1 to 2 tablespoons minced fresh Italian parsley leaves
  • 1 tablespoon fresh lemon juice
  • 1 ½ teaspoons chopped fresh dill or ½ teaspoon dried dill
  • 1 teaspoon Dijon mustard
  • ½ teaspoon onion powder
  • ½ teaspoon fine ground sea salt or to taste
  • ¼ teaspoon freshly ground black pepper or to taste
  • ¼ teaspoon granulated sugar
  • 3 cups chopped rotisserie chicken breast skin removed
  • cup diced celery
  • 2 to 3 thinly sliced green onions or ¼ cup diced red onion

Instructions

  • In a medium mixing bowl, combine the mayonnaise, parsley, lemon juice, dill, Dijon, onion powder, sea salt, and pepper. Add the chicken, celery, and onions (green or red) and stir well to combine. Taste and season with additional salt and pepper, if desired.
  • Transfer the chicken salad to an airtight container and refrigerate for up to 3 to 4 days.
  • Use for sandwiches, wraps, or serve over a bed of greens.
