Spinach Feta Orzo

Ingredients

  • 1 cup orzo regular or whole grain
  • 1 tablespoon extra virgin olive oil
  • 2 large handfuls fresh spinach leaves sliced into thin pieces
  • ½ cup crumbled feta
  • coarse salt and pepper to taste

Instructions

Cook the Orzo

  • Bring a pot of salted water to a boil over HIGH heat. Once the water reaches a boil, add the orzo and cook until the pasta reaches al dente, approximately 7 to 9 minutes or as the package indicates. Transer the orzo to a fine mesh colander to drain and discard the cooking water.
  • Transfer the drained orzo back to the warm empty pot (off the heat). Add the oil to the orzo and stir. Add the sliced fresh spinach and stir well until spinach is wilted into the orzo. Add crumbled feta and season to taste with salt and pepper. Transfer to a serving bowl, if desired, and serve.
