We’re ready to spring forward this weekend and as hard as it is to lose that hour, I’m so ready for everything else that comes with the time change. Warmer weather, sunny mornings, spring flowers, it’s all good!
With just two weeks left until Easter, it’s time to start planning the menu. I will most definitely do a ham and it’s pretty likely it will be the Maple Glazed Spiral Ham that I did last year. I love the ease of cooking a spiral sliced ham and I can’t ever seem to resist the giant pile of them available at Costco each year. I haven’t decided yet whether I’ll do my mom’s Easy Scalloped Potatoes or Grandma’s Special Hash Brown Casserole from my mother-in-law’s collection. I may need to squeeze both of them in on Easter week! If you are looking for a veggie side dish idea, I highly recommend the Bourbon Glazed Carrots I made last year. They are really special and out-of-this-world good!
One last thing before we get to the recipe roundup – if you do an Easter ham, be sure to pop the meaty leftover bone in a plastic storage bag and tuck it in your fridge. That bone is a valuable little kitchen commodity and there are some really fabulous things you can do with it.
