I recently asked the folks on my Facebook page what type of recipes they wanted to see most right now. You might think grilling recipes or maybe 30 minute meals were most requested?

Nope! I was quite surprised that in the midst of summer, slow cooker recipes were the top choice. My slow cooker sees a lot of action all year round and I’m pleased to know that I’m not alone.

Why are we using our slow cookers in the summer? Because with a little advance thought and morning prep, you can walk in the door at the end of a busy day and be minutes away from dinner. This concept is not seasonal in my opinion.

With this Slow Cooker Chicken Caesar Sandwich recipe you are just minutes of prep and a short ingredient list away from a delicious meal.

Ingredient Notes

Chicken, Caesar salad dressing, and other ingredients in bowls with text.
  • Chicken: Boneless skinless chicken breasts.
  • Broth: Low-sodium chicken broth.
  • Caesar salad dressing: You can make your own Homemade Caesar Salad Dressing or grab a good quality bottled Caesar dressing at the store. We like Cardini’s in a pinch.
  • Parmesan cheese: Shredded.
  • Fresh parsley and freshly ground black pepper
  • For the sandwiches: I love brioche sandwich buns but sesame seed hamburger buns are a good choice too. You’ll also need some romaine lettuce leaves for that much needed crunch.

How to Make Slow Cooker Chicken Caesar Sandwiches

  1. Place the chicken and chicken broth in your slow cooker. Cover and cook on low for 6 to 7 hours.
  2. Transfer the cooked chicken to a bowl and shred it with two forks.
  3. Discard the cooking liquid and place the shredded chicken back in the slow cooker. Add the Caesar dressing, Parmesan cheese, parsley, and pepper and stir until well combined.
  4. Cover and cook on high for 20 to 30 minutes or until warmed through.

Serving Suggestions

Chicken Caesar Sandwiches: This shredded Caesar chicken is delicious loaded up on brioche buns with crunchy romaine lettuce. These sandwiches are delicious with thick slices of tomato too!

Chicken Caesar Wraps: Roll up the filling and romaine lettuce in flour tortillas or spinach wraps like I do for my California Club Wraps. For a lighter option, we love low-carb wraps.

Storage Tips

Transfer the cooled leftover chicken to an airtight container and refrigerate for up to 4 days.

Leftovers can be reheated the following day or they are delicious cold from the fridge.

Ingredients 

  • 2 pounds boneless skinless chicken breasts, trimmed of fat
  • 2 cups low-sodium chicken broth
  • 1 cup Homemade Caesar Salad Dressing, or your favorite store-bought creamy Caesar Dressing (like Cardini's), or more as needed
  • ½ cup shredded Parmesan cheese
  • ¼ cup fresh chopped parsley
  • ½ teaspoon freshly ground black pepper
  • 6 hamburger buns, we love brioche buns
  • Romaine lettuce leaves, as needed

Instructions 

  • Place the chicken and chicken broth in a 4- to 6-quart slow cooker, cover and cook on LOW for 6 to 7 hours.
  • Transfer the cooked chicken to a bowl or cutting board and shred with two forks. Discard the cooking liquid and return the shredded chicken to the slow cooker. Add the Caesar dressing, Parmesan cheese, parsley, and pepper and stir until well combined. If you'd like a creamier chicken, add additional dressing as needed. Cover and cook on HIGH for 20 to 30 minutes or until warmed through.
  • Serve on hamburger buns or wraps with romaine lettuce.
