These Brown Sugar Dill Carrots are from the collection of recipes that I’ve been making forever and a day. Today they are finally getting their well deserved spot here on Valerie’s Kitchen.

  • They cook on the stovetop from start to finish.
  • Will work any night of the week but are special enough to include on a holiday menu.

I used to include carrots on our menu at least once or twice a month when my boys were little. I always knew they would all eat their veggies those nights. They may seem a little special for a random weeknight dinner, but they are so quick and easy to make that they really do work anytime.

Like my Bourbon Glazed Carrots and Honey Roasted Rainbow Carrots and Brussels Sprouts, they’re perfect for serving with a holiday ham, turkey, or roast beef. Super versatile, super delicious!

  • Carrots – I’ve done this recipe with regular carrots, baby carrots, and rainbow carrots. They all work great!
  • Butter – You’ll need 3 tablespoons of salted butter – no need to soften it.
  • Brown sugar – Light brown sugar adds just the right amount of sweetness to the buttery dill glaze.
  • Dill – Fresh or dried will work. If you are making these carrots for a holiday meal, I recommend going with fresh.
  • Salt and pepper – The carrots are simply seasoned with salt and pepper to allow the flavors of brown sugar and dill to shine through.

How to Make Brown Sugar Dill Carrots

Carrots are cooked with brown sugar and dill in a skillet.
  1. Slice your carrots on the diagonal about 1/2-inch thick and place them in a 12-inch skillet. Pour in just enough water to come to the top of the carrots (they should just barely be covered with water). Bring to a boil, then reduce heat to low, cover, and simmer until just fork tender (be careful not to overcook).
  2. Drain water from the skillet and return it to the heat. Add the butter and brown sugar and cook, stirring occasionally until the butter has melted.
  3. Add the dill, salt and pepper and continue to cook, stirring until the butter sauce has thickened a bit.
  4. Serve immediately garnished with additional fresh dill, if desired.

Ingredients 

  • 1 ½ pounds carrots, peeled and cut slightly on the diagonal into ½-inch slices (about 4 cups sliced)
  • 3 tablespoons butter
  • 3 tablespoons brown sugar
  • 1 tablespoon chopped fresh dill or 1 teaspoon dried, plus additional for garnish, if desired
  • ½ teaspoon salt
  • freshly ground black pepper, to taste

Instructions 

  • Place sliced carrots in a 12-inch skillet and pour in just enough water to come to the top of the carrots (they should just barely be covered with water). Bring to a boil over HIGH heat. Reduce heat to LOW, cover, and simmer for about 6 to 7 minutes or until just fork tender (be careful not to overcook).
  • Drain water from the skillet and return it to the heat. Add the butter and brown sugar and cook, stirring occasionally until the butter has melted. Add the dill, salt and pepper and continue to cook, stirring for 2 to 3 minutes, or until the butter sauce has thickened a bit.
  • Serve immediately garnished with additional fresh dill, if desired.
