There are two things many of us have in common this week. It’s hot out there and the cost of meat is reaching some jaw-dropping heights. There is no better time to get these fresh, crunchy California Club Wraps on your menu!

What Makes it a California Club Wrap?

If you ever come across a California Club on a restaurant menu, regardless of whether it is a sandwich or a wrap, it will almost always include avocado. And, instead of the classic combination of turkey, ham and bacon they are frequently made with chicken (or turkey) and bacon, omitting the ham. Spinach tortillas add even more of a fresh, California vibe to this delicious chicken bacon wrap.

Ingredient Notes

  • Bacon – Crisply cooked. You can do this in the cooler morning hours so you don’t have to turn on the oven later in the day.
  • Avocados
  • Fresh lemon juice
  • Mayonnaise – My favorite mayo of the moment is olive oil mayonnaise. A healthier fat and very good!
  • Honey – Adds just a hint of sweetness to the delicious chicken dressing.
  • Onion powder and dried basil
  • Sea salt and freshly ground black pepper
  • Shredded rotisserie chicken breast – All hail the rotisserie chicken! May you always be value priced and readily available! You can also use cooked leftover chicken.
  • Spinach wraps – I use Mission Garden Spinach Wraps. This flavor is also available in a gluten free version for a gluten free wrap and a lower carb version. You can also use whole wheat tortillas or any of your favorite wraps.
  • Green leaf lettuce leaves – For that crispy, crunch. You can substitute romaine lettuce if you’d like.
  • Tomato
  • Finely shredded Monterey Jack cheese

Substitute shredded or chopped turkey for the chicken and make it a California Turkey Club Wrap. A very tasty way to make use of those holiday leftovers.

How to Make California Club Wraps

This is a quick overview of how to make this recipe. You’ll find detailed instructions in the recipe card at the end of this post.

Prep the Ingredients

  1. Lightly smash the avocado with a little lemon juice and salt.
  2. For the chicken dressing, combine the mayonnaise, honey, onion powder, basil, lemon juice, salt, and pepper.
  3. Add the chicken to the dressing mixture and stir to combine.

Assemble the Wraps

Smashed avocado, lettuce, tomato and bacon are layered on a large green spinach wrap.
  1. Spread mashed avocado down the center of a spinach tortilla.
  2. Layer it with lettuce leaves and chopped tomato.
  3. Next, add a couple of slices of crisp, cooked bacon.

If your tortillas are chilled, it’s a good idea to soften them in the microwave for just a few seconds before filling to make them more pliable and easy to roll.

  1. Top the bacon with some of the chicken mixture.
  2. Finally, sprinkle it with shredded cheese.
  3. Tightly roll up the wrap and repeat with the remaining filling ingredients and tortillas.

Meal Prep Tips

To prevent the wraps from becoming soggy, it’s best to assemble and serve them within a few hours. For a take to work or school lunch, assemble the California Club Wraps in the morning, wrap them tightly with plastic wrap, and store in the refrigerator until ready to eat.

Lighten It Up

  • Substitute nonfat plain Greek yogurt for the mayonnaise.
  • Use less bacon, substitute it with turkey bacon, or eliminate it altogether.
  • Omit the cheese and it will still be delicious!
  • Look for low-carb tortillas or wraps.

Ingredients 

  • 8 strips bacon
  • 2 avocados, pitted and peeled
  • 2 tablespoons lemon juice, divided
  • ½ teaspoon fine ground sea salt, divided
  • cup mayonnaise
  • ½ teaspoon honey
  • ¼ teaspoon onion powder
  • ¼ teaspoon dried dried basil
  • freshly ground black pepper, to taste
  • 3 cups shredded rotisserie chicken breast, or leftover turkey
  • 4 large spinach wraps, like Mission Garden Spinach Wraps (regular or gluten free)
  • 4 or 5 green leaf lettuce leaves, torn into large pieces
  • 1 tomato, chopped
  • 1 cup finely shredded Monterey Jack cheese

Instructions 

Cook the Bacon

  • Preheat the oven to 425 degrees F and line a large rimmed baking sheet with foil. Place the strips of bacon on the foil-lined pan and bake for 15 minutes or until crisped. Remove from the oven and transfer the bacon to paper towels to drain. Keep whole (don’t crumble).

Prepare the Other Ingredients

  • In a small bowl, lightly smash the avocado with 1 tablespoon lemon juice and a ¼ teaspoon salt. Set aside.
  • In a medium bowl, combine the mayonnaise, honey, onion powder, basil, remaining 1 tablespoon lemon juice, remaining ¼ teaspoon salt, and pepper to taste. Add the chicken and stir to combine.

Assemble the Wraps

  • Spread one-quarter of the slightly mashed avocado down the center of one spinach tortilla. Layer it with one-quarter of the lettuce leaves, one-quarter of the tomato, 2 slices of bacon, one-quarter of the chicken mixture, and one-quarter of the cheese. Fold one side over the filling and tightly roll up. Repeat with remaining filling ingredients and wraps.
  • Slice the wraps in half and serve.

Notes
