A lot of us try to reset our eating habits in January, only to feel like we have to throw it all out the window when Super Bowl rolls around. These Chicken Sausage Bites are a lighter, protein-forward option that still feels just as fun and snackable as the classics.

As a matter of fact, when I set a platter of them out at Christmas, they were the first of all the appetizers to go.

Ingredient Notes

  • Sausage: For the sausage bites, use 1 to 1½ pounds of fully cooked chicken sausage in any flavor you love. Italian, garlic-herb, apple, smoked, or spicy varieties all work great. You’ll also need a little olive oil for browning the sausage in the skillet.
  • Classic Honey Mustard Dip: Dijon mustard, mayonnaise, honey, and just a tiny splash of apple cider vinegar come together to make a creamy, tangy dip that pairs perfectly with the savory sausage.
  • Chili Jam Dipping Sauce: Chili sauce, jam or jelly (apricot, peach, pineapple, or pepper jelly all work well), and a splash of vinegar or lemon juice create a sweet and slightly spicy sauce. Add a pinch of red pepper flakes if you’d like a little extra heat.

How to Make Chicken Sausage Bites

  1. Combine the Dips: Combine the ingredients for each dipping sauce in separate small bowls and stir until smooth. Transfer each dip to a small ramekin and set aside.
  2. Brown the Sausage: Heat the olive oil in a large nonstick skillet over medium heat. Add the sliced chicken sausage and cook, turning as needed, until browned and lightly crisp on both sides.

Ingredients 

For the Sausage Bites

  • 1 to 1½ pounds fully cooked chicken sausage, any flavor
  • 1 tablespoon olive oil

Classic Honey Mustard Dip

  • 2 tablespoons Dijon mustard
  • 1 tablespoon mayonnaise
  • 1 tablespoon honey
  • tiny splash apple cider vinegar

Chili Jam Dipping Sauce

  • ¼ cup chili sauce, like Heinz
  • 2 tablespoons jam or jelly, apricot, peach, pineapple, or pepper jelly all work
  • ½ to 1 teaspoon apple cider vinegar or lemon juice
  • pinch red pepper flakes, optional

Instructions 

  • Slice the sausages on the diagonal into ¾-inch pieces.
  • Heat the olive oil in a large nonstick skillet over MEDIUM heat. Add the sliced sausage and cook for 3 to 5 minutes, flipping as needed, until browned on both cut sides.
  • Transfer the slices to a double layer of paper towels and blot gently to remove excess oil.
  • Pierce each slice with a toothpick and arrange on a serving platter (alternately, you can serve on a platter with the toothpicks in the center.)
  • Place both dips in small ramekins on the platter with the sausage bites. Serve warm or at room temperature.
  • Classic Honey Mustard Dip: Whisk together the Dijon, mayonnaise, honey, and a splash of vinegar. Add a pinch of salt, to taste.
  • Chili Jam Dipping Sauce: Stir together the chili sauce, jam or jelly, and vinegar or lemon juice. Add red pepper flakes if you want a little heat.

Notes

Nutrition is based on 1 pound of sausage plus the dipping sauces, which works out to about 5 to 6 sausage bites per serving. Check product labels to be sure all ingredients meet your dietary needs (gluten free, dairy free, and nut free), as brands can vary.
One 5-pack of chicken sausages is about 1 pound and yields roughly 35 bite-size slices. For a larger group, use 1½ to 2 pounds (1½ to 2 packs) and increase the dipping sauces as needed.
Works with any fully cooked chicken sausage – Italian, garlic-herb, apple, smoked, or spicy varieties.
If using uncooked sausage, cook fully according to package or butcher instructions before slicing.
Sausage bites can be browned earlier in the day and reheated briefly in the skillet.
For shortcuts, pair with BBQ sauce, pepper jelly, or your favorite store-bought honey mustard.
