It’s cold outside, you’re craving steak, and grilling in the rain just isn’t happening. Steak Bites to the rescue!

When I’m not using my stove to oven method for cooking sirloin steak, you can bet I’m making these Steak Bites. This quick and easy recipe is one of my favorite ways to prepare steak when the weather isn’t cooperating.

If you’re trying this recipe, I really hope you’ll mix up a batch of the creamy horseradish sauce for dipping. This is a seriously delicious meal and SO incredibly easy to make.

Ingredient Notes

  • Steak: I highly recommend using top sirloin steak for steak bites. This cut of steak is lean, full of beefy flavor, and more budget-friendly than fattier cuts like boneless rib-eye. I wouldn’t recommend tri-tip or flank steak for this recipe since they won’t turn out as tender. Definitely skip chuck or anything labeled “beef stew meat. Beef chuck requires a long cooking time and is best used for recipes like my Classic Stovetop Beef Stew.
  • Seasoning: Big flavor comes from a simple combination of Italian seasoning, garlic powder (or granulated garlic), kosher salt, and freshly ground black pepper.
  • Butter garlic sauce: Melted butter and fresh minced garlic cloves.
  • Garnish: A little minced fresh parsley brightens up the dish.
  • Optional creamy horseradish sauce: I highly recommend mixing up this easy dipping sauce. It’s just a little cream-style horseradish mixed with sour cream and it takes steak to the next level!

How to Make Steak Bites

This is a quick overview of how to make this recipe. You’ll find detailed instructions in the recipe card at the end of this post.

  1. In a medium bowl, toss the cubed steak with olive oil and the spices until well coated.
  2. In a large cast iron skillet, heat olive oil over medium-high heat. Add the steak bites and spread them evenly across the bottom of the pan in a single layer. Let them cook, without stirring, for 2 minutes. Then, stir and continue to cook, stirring occasionally, for a couple more minutes, just until browned all all sides. Transfer the steak bites to a plate and set aside.
  3. Reduce the heat a little and add the butter to the pan. After it melts, add the garlic and cook until fragrant.
  4. Add the steak bites back to the pan and combine them with the garlic butter mixture. Remove from the heat and toss with the parsley.

Storage and Reheating Tips

  • Refrigerate: Store leftover Steak Bites and creamy horseradish sauce in separate airtight containers in the fridge for up to 3 days.
  • Reheating: For the best result, I recommend reheating leftover Steak Bites on the stove. Place them in a skillet over medium heat, add a little butter or oil, and quickly sear them, just until warmed through. Avoid overcooking to keep them tender. To reheat in the microwave, place the Steak Bites on a microwave-safe plate, cover with a damp paper towel, and heat in 15 to 20 second intervals, until warm.

Serving Suggestions

Dipping Sauce – Serve these beefy bites with creamy horseradish sauce (see the recipe card below) or your favorite steak sauce for dipping.

Salad – Toss a simple green salad and toss it with Apple Cider Vinaigrette or Honey Balsamic Vinaigrette.

Veggies – A simple vegetable side dish is all you need for a delicious low-carb meal. Easy butter and garlic Sautéed Green Beans or Sheet Pan Roasted Vegetables are both great choices.

Potatoes – Steak and potatoes = perfection! Make a batch of Crispy Oven Baked Fries or cook up some easy Parsley Potatoes or Lemon Garlic Roasted Potatoes to complete your meal.

Ingredients 

  • 1 ½ pounds top sirloin steak, cubed 1-inch
  • 2 tablespoons olive oil, divided
  • ¾ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper, or to taste
  • ½ teaspoon granulated garlic or garlic powder
  • ½ teaspoon Italian seasoning
  • 3 tablespoons butter
  • 2 garlic cloves, minced
  • 1 tablespoon minced fresh parsley
  • Creamy horseradish sauce and/or steak sauce, for serving, optional

Creamy Horseradish Sauce (Optional)

  • cup sour cream
  • 1 tablespoon cream-style horseradish, or to taste

Instructions 

  • In a medium bowl, toss the cubed steak with 1 tablespoon olive oil. Add the salt, pepper, granulated garlic (or garlic powder), and Italian seasoning. Toss the steak bites with the oil and spices until well coated.
  • In a large cast iron skillet, heat the remaining 1 tablespoon oil over MEDIUM-HIGH heat. Add the steak bites and spread them evenly across the bottom of the pan in a single layer. Cook for 2 minutes, undisturbed. Then, stir and continue to cook, stirring occasionally, until meat is browned on all sides, an additional 2 to 3 minutes. Ideally, they’ll be browned/seared with a light pink interior. Transfer the steak bites to a plate and set aside.
  • Reduce the heat to MEDIUM and add the butter to the pan. After it melts, add the garlic and cook for 1 minute. Add the steak bites back to the pan and stir them into the garlic butter mixture. Remove from the heat and toss with the parsley.
  • Serve with the horseradish dipping sauce and/or steak sauce.

For the Creamy Horseradish Sauce

  • In a small bowl, combine the sour cream and horseradish, to taste.
