St. Patrick’s Day is such a low-stress, fun holiday. I love that everyone wears their green, there are fun celebrations going on everywhere, and you can always count on delicious food and lots and lots of beer. This is never a bad thing.
It’s always been our tradition in this house to eat corned beef and cabbage on St. Patrick’s Day – specifically my Guinness Corned Beef, a tried and true and much-loved recipe. It is so tasty that I always wonder why we only eat corned beef on St. Patrick’s Day. It’s such an easy dish to prepare and there is SO much you can do with the leftovers, but just like the great big turkey I roast every Thanksgiving, it only graces our table once a year. I guess that makes all the more special.
As much as I love it, there is a whole lot more than corned beef going on that day as you’ll see below.
